Fresh pomegranate gets most of the attention, but the reduced syrup — pomegranate molasses, rob-e anar in Persian cooking — is the form that shows up most in Iranian kitchens. It's made by simmering pure pomegranate juice down until it thickens into a dark, tart-sweet syrup, no added sugar in the traditional version. A small bottle goes further than a bowl of fresh arils and keeps far longer in the pantry.
What it's actually used for
Pomegranate molasses is a souring agent before it's a sweetener — it does the job lemon juice or tamarind does in other cuisines. Fesenjan, the walnut-and-pomegranate stew, is the best-known use, but it also goes into salad dressings in place of vinegar, brushed onto grilled meat in the last few minutes of cooking, or stirred into a glaze. A teaspoon changes a dish; a tablespoon can overwhelm one, since the concentration varies noticeably between brands.
Reading the label before buying
Cheaper bottles cut the syrup with sugar, corn syrup, or citric acid to mimic the tartness without using enough actual pomegranate juice. The ingredient list should read close to "pomegranate juice" as the first and near-only item. A bottle where sugar or a sweetener is listed before pomegranate juice is a diluted product, priced like the real thing but performing differently in a recipe that expects it to add both sourness and body.
Fresh arils versus molasses for different jobs
Fresh arils work where you want texture and a burst of juice — scattered over rice, a salad, or a dessert plate. Molasses works where you want flavour without texture — worked into a sauce or marinade. Keeping both in the kitchen covers more ground than either alone, and the molasses bottle, once opened, outlasts a punnet of fresh arils by months rather than days.
