Two kinds of drying, two different jobs
Silica gel drying pulls moisture out fast at room temperature using a desiccant crystal, which keeps a flower's shape and colour intact for display — it's a preservation trick, not a food process, and nothing dried this way is meant to be eaten. Dates go through sun-drying or a low-heat oven or dehydrator instead, a slower process that both removes water and lets natural sugars migrate to the surface, which is where the slight white bloom on some grades comes from.
What the drying method tells a buyer about texture
A date dried too fast turns hard and leathery; one dried too slowly can ferment before it's shelf-stable. Grades like Safawi and Ajwa sold moist and semi-soft come from careful, gradual moisture reduction, usually down to around 20-25% residual moisture, while a fully sun-dried date meant for long-haul export can sit closer to 15%. Neither is better — they suit different uses, and the difference should show up honestly in a supplier's grading notes.
Reading a supplier's grading before you order
If a listing doesn't mention texture or moisture handling at all, ask before committing to a bulk order. A grading system that only talks price and skips texture is missing the detail that decides whether a batch works for gifting, for baking, or for retail shelf life.
